Green curry with chicken แกงมรกตสดใสเขียวหวานไก่

Green curry with chicken.

Recipe Ingredients 
  • 2 table spoons green curry paste
  • 150 grams chicken breast or thigh, cut in bite-size pieces
  • 100 ml instant coconut milk
  • Mixed 200 ml instant coconut milk with 200 ml chicken stock or water 
  • 6 grams sweet basil leaves
  •  1 teaspoon palm sugar    
  • 1 1/2 tablespoons fish sauce   
  • 1 red chili, sliced diagonally    
  • 1 kaffir lime leaves   
  • 5 round eggplants, cut into 4 small pieces.
